Garam Masala

4 tbsp coriander seeds
1 tbsp cumin seeds
1 tbsp black peppercorns
1/2 tbsp black cumin seeds = kalonji/nigella
1/2 tsp cloves
5 cm cinnamon stick
4 large bay leaves
4 black cardamom pods

Dry roast.
Cool and grind to fine powder

Makes about 1/3cup
